in this summer heat it is nice to enjoy the season's abundance with a nice and light puree. serve this along side some local cucumbers, summer squash, peppers, or whatever you have growing in your garden. enjoy this refreshing little snack on these hot summer days!
1 cup cooked fresh beans (or 1 can of unseasoned lima beans)
juice of 1 lemon
2 cloves of garlic
3 Tbsp extra virgin olive oil
salt to taste
-put all ingredients into a food processor or immersion blender process until smooth
-chill in refrigerator for an hour
-enjoy on a hot summer day!
