as the days are getting cooler and the sun is setting sooner comfort meals have been calling my name! last night i made a meal inspired by pot pies. is there any meal that screams comfort more than a good ole' pot pie?
ingredients
-4 cups of roasted root vegetables (i used radishes, onions, turnips, garlic, and carrots
-3 Tbsp butter
-1/3 cup all purpose flour
-2.5 cups whole milk
-salt and pepper to taste
-rolled pie crust for top
directions
-pre-heat oven to 375 degrees
-roast veggies
-in a frying pan, melt butter and slowly add flour
-simmer, stiring constanly for a couple of minutes until the flour begins to darken
-slowly add milk and combine, stir continuously
-in a large pie pan or small casserole, combine the roasted vegetables and milk mixture
-lay the pie crust on top, tucking the excess into the sides of pan
-bake uncovered for 30-40 minuts or until the crust gets some color and crisps
-enjoy with some greens and mashed potatoes!
