this is one of my favorite things to do with fresh tomatoes from the garden. this time of year we are getting loads of them and this chutney is a great versatile condiment for so many things.
i love to make omlets with it, toss it with some pasta, and top some fresh beans with it.
1 small onion
2 cloves of garlic
a dash of crushed red pepper
-heat up a pan with some olive oil
-cut up the onion and toss in the hot pan
-continue to cook on high heat for a couple of minutes, until you get some color
-throw the tomatoes in and continue cooking on high for a couple of minutes, you want the tomatoes to get some color too
-add the garlic and stir for a minute
-add some salt, pepper, and crushed red pepper
***you can also vary this recipe by adding a little curry
