this is my favorite time of year for fresh vegetables. it is still cool enough to get carrots, potatoes, and other root veggies. so before it gets too hot to grill....we have been doing a lot of it.
the other day i grilled up some potatoes, carrots, and tofu. we made some greens to have alongside the grilled stuff. a great springtime meal!
-heat up the grill
-blanch the veggies
-toss the veggie in some olive oil
-grill' em! salt and pepper em to taste!
